Congratulations to the winners of the Apple Dessert Bake Off contest held during the annual Lincoln Square Apple Fest, Saturday, Sept. 17! Local restaurant chefs judged the entries and prizes were awarded for first through third place. First place, for Apple Pie Crisp, went to Arden Kruger. Second place, for Frosted Apple Cake, went to Julie Gianni. Third place was a tie, between the German Apple Fluff by Andrea Rose Utschen and the Good Oldfashioned Pancakes by Maria Bappert. The winning recipe from Arden Kruger is published below.
Apple Pie Crisp
9” pie pan, 350 degree oven
50-60 min. Serves 8-10
Crust:
1-1/4 cups graham cracker crumbs
1/4 cup sugar
5 tbsp. melted unsalted butter
Filling:
1-3/4 lb. peeled, cored Granny Smith apples thinly sliced
Topping:
1 cup light brown sugar, tightly packed
1 cup rolled oats
3/4 cup all purpose flour
1-1/4 tsp. ground cinnamon
1/4 cup coarsely chopped walnuts
1/4 cup sweetened coconut flakes
1 stick unsalted butter, melted
Crust:
In a large bowl, combine graham cracker crumbs, sugar and melted butter, and mix well. Press evenly across bottom and up sides of a 9" pie pan. Bake at 350 degrees for 8 - 10 minutes. Remove from oven.
Filling:
Evenly distribute sliced apples into the graham cracker shell, taking care to fill in any spaces and holes. Set aside.
Topping:
In a large bowl, combine brown sugar, oats, flour, cinnamon, walnuts, and coconut, and mix well. Carefully distribute topping loosely over dome (do not pack), completely covering apples.
Bake at 350 degrees for 50 - 60 minutes. |
